15 Minute Chicken Soup

Just a few days ago my friend was sending me pics and videos of his play-by-play process of making chicken soup. Usually, I'm the one sending friends photos of my gorgeous food preps, so I'll admit, I was feeling a little jealous. The next morning, I hopped out of bed and went straight to the grocery store determined to make the best chicken soup ever. I already had a full day of self care activities planned and had to be at my favorite cardio kickboxing class by 9:15am, so I didn't have much time to shop, prep or cook.


I had to be very strategic with my plan to win this pretend contest in my head... The one where I make a better soup conconction than my friend. I told him we will have to exchange soups soon for a taste test.


Because I only had about 10 to 15 minutes to get this soup going, I decided to use the slow cooker. But I also needed it to taste better than my friend's version (haha), so I gave it a few unique touches.


I started by quickly sauteing some of the veggies (the onions, fresh garlic and celery) to buld flavor, then added a littel twist with ginger, turmeric and fresh mint to the slow cooker pot. The result was a cozy, nourishing soup that tasted like it had been simmering all day. I threw it all in the slow cooker before my fitness class and it was complete 4 hours later by the time I got off a Growth Group call via #growthday.


So, this soup can be made in (3) simple steps:

  1. Saute' the onions, fresh garlic and chopped celery first

  2. Add the 2 cartons of chicken broth, 3 chicken breasts (after cleaning them), carrots, sauted veggies, seasoning to the slow cooker that is set on HIGH for 4 hours

  3. Add the cannelloni beans about an hour before the timer goes off (after 3 out of 4 hours of cooking)



A Greek or an Italian salad is always a perfect complimentary dish to have with any soup.

Ingredients

  • organic chicken breast

  •  extra olive virgin oil

  • 2 cartons of chicken broth

  • a bag of ribbed carrots

  • 1 can of canneloni beans

  • 1 white onion

  • fresh garlic

  • fresh ginger

  • mint leaves

  • fresh lemon juice

  • celery

  • turmeric

  • thyme

  • salt and pepper to your liking

The Plan

Start food prepping...

Chop the veggies.

Set the veggies aside in a bowl.

Add seasonings and salt+pepper to a bowl and set it aside...

Clean the chicken...

Start cookin'... -

Heat olive oil on medium heat in saucepan on stovetop. Saute' the onion, chopped garlic and chopped celery.

After you do that, turn the slow cooker on HIGH heat and add the chicken broth, then the chicken, then the seasoning and then the veggies.

Cook it in the slow cooker for 4 hours. Add broth.

Final Touches...

Add rice or noodles if you'd like. Stir in additional pepper and salt to your liking.
