Cozy Chicken Soup in August

Summer's still here but I'm already feeling the pull of cozy soup season. This basic chicken soup recipe is light and perfect for summer evenings in August .
A Greek or an Italian salad is always a perfect complimentary dish to have with any soup.

Get creative with your choice of any ingredients. In August, for soups, I like...
Chicken!!
extra olive virgin oil
veggie or chicken broth
carrots
onion
fresh dill
lemon zest
parsley
salt and pepper to your liking
The Plan
Start food prepping...
Slice the veggies.
Set the veggies aside in a bowl.
Add seasonings and salt+pepper to a bowl and set it aside...
Clean the chicken...
Start cookin'...
Heat olive oil on medium heat in saucepan on stovetop. Add the veggies, seasonings and salt. Cook for 8-10 minutes. Add broth. Bring to a boil before reducing heat to simmer. Add the chicken. Cook until veggies are tender. Once cooked, take the chicken out, let it cool for 10+ minutes, then shred it and add it back to the pot.
Final Touches...
Add rice or noodles if you'd like. Stir in additional pepper and salt to your liking.
