Not sure about you but I have a lot of left over turkey from Thanksgiving!! Why not make a soup of it? #turkey
This recipe is quick because the turkey has been carved and left over from your Thanksgiving meal (or bought that way from the grocery store)!
A Greek or an Italian salad is always a perfect complimentary dish to have with any soup.
This recipe makes about 8 servings.
Ingredients
Shredded carved turkey from you Thanksgiving meal or the grocery store
4 cups of veggie or chicken broth
1+ tablespoon Olive Oil (the more the merrier)
1 garlic clove, minced
1 onion, chopped
3 celery stalks, chopped
3 carrots, chopped
1 cup green beans, cut about an inch each
1/2 a bag of "nibbles" gourmet potatoes, halved (tiny potatoes), optional
1 cup of brown steamed rice, optional
Seasoning of your choice
Add salt and pepper to your liking
The Plan
Start food prepping...
Chop the veggies separately in the chopper or with a knife.
Set the veggies aside in a bowl.
Measure out the seasonings and optional salt/pepper and set aside in a bowl.
Start cookin'...
Add the olive oil to your saucepan over medium heat.
Add onion, salt, pepper and garlic. Cook for about 3-5 minutes.
Add the celery and carrots. Cook for a 2-3 minutes.
Add potatoes, green beans, broth and seasonings to the pan, bringing to a boil.
Reduce heat to med-low. Cook for 10ish minutes or until potatoes are tender.
Final Touches...
Take the pot of soup off of the heat and let it sit for about 10 minutes to cool a bit.
Add the turkey and rice at the end since they are already cooked/steamed.
Add more seasoning and salt & pepper to taste, if needed.
