Kale is packed with vitamins A, C and K, plus minterals like calcium and potassium. I like to make a salad of it now and then...
Cauliflower is rich in vitmain C, K and folate. Roasting it is a great way to make it tastier.
This recipe makes 4 servings.
Ingredients
Chicken breast
2 cups kale
1 onion
1 pound of cauliflower florets
1/8 teaspoon salt
1/8 teaspoon pepper
1/2 crumbled goat cheese
Raisins
2 tablespoons olive oil

Start food prepping...
Bake the chicken and shred it.
Prep the salad.
Enjoy.
Start cookin'...
Chicken
Preheat oven to 400F
Place chicken breasts on baking sheet
Drizzle with olive oil or avocado oil
Season with salt and pepper
Bake 20-25 minutes or until internal temp reaches 165F
Let rest 5 minutes
Shred
Salad
Toss cauliflower with olive oil, salt, pepper
Add the cauliflower to baking sheet at 450 for 25 minutes
Toss kale with olive oil, lemon and vinegar
Final Touches...
Add chicken to the salad
Add goat cheese
Add olive oil
Add raisins
