Avocado Egg Salad (No Mayo!)

I've been deep diving into the benefits of metabolic health and dabbling in some new recipes that are "paleo" friendly. I'll be posting more recipes like this one throughout 2025.


What I've been learning is that a simple way to support metabolism is to prioritize protein, healthy fats and fiber at each meal to help keep blood sugar steady and energy levels smoother. For years, I had no clue that my mood and energy fluctuated as a result of how I was eating. I thought I was eating healthfully but I was missing a few key nuts and bolts. I recently ordered thorough blood tests and results were eye opening. This ignited my interest in learning even more about how foods impact my personal overall health. With just a few tweaks I've significantly increased my energy and I am sleeping much more deeply. Most importantly to me, my ability to focus has drastically improved.


This recipe is easy to make and includes one of my favorite foods, the avocado.


A Greek or an Italian salad is still always a perfect complimentary dish to have in addition to any meal.

THE PLAN

Start food prepping...

Ingredients

  • 2 hard-boiled eggs, chopped

  • 1/2 an avocado, mashed

  • 1 tsp Dijon mustard

  • 1/2 tsp fresh lemon juice

  • Salt & pepper to taste

  • Optional: Chopped fresh herbs (chives or parsley)

Get to work... Prep It!!

  • Mash the avocado in a bowl until smooth

  • Stir in Dijon mustard, fresh lemon juice, salt and pepper

  • Fold in chopped eggs and mix gently

Final Touches...

Serve on a bed of greens

OR

Serve with cucumber slices

OR

Wrap the concoction in lettuce


This creamy, nourishing egg salad is packed with protein, healthy fats and fiber and is perfect for a light lunch or snack that keeps you full and energized.
